Name: Matzo Ball Soup

Ingredients: 2 tablespoons chopped flat-leaf parsley; 3 tablespoons water; 3 large eggs, beaten; 2 skinless, boneless chicken thighs; 3 quarts Chicken Stock, or good quality store-bought chicken broth; 2 stalks celery, chopped; 2 carrots, peeled and chopped; 2 cups elbow macaroni; 1 tablespoon minced garlic; ¼ yellow onion, chopped; 4 tablespoons grapeseed oil (or other neutral oil), divided; ¾ cup matzo meal; ½ teaspoon baking powder; Kosher salt and freshly ground black pepper

Working in any hotel restaurant, I think you should always have matzo ball soup on the menu, especially during the holidays. It’s a regularly requested soup nationally, much like chicken noodle soup. Matzo balls are really a type of dumpling in my mind, much like an Austrian knödel. I highly recommend making my Chicken Stock for this traditional and festive soup.
