Ruffles are made in a similar fashion to chocolate cigarettes, but using a turning movement. You literally have to ruffle the chocolate, which then looks like drapery. Another case of practice makes perfect—even professionals sometimes have to make a special effort—so have confidence!

Spread the tempered chocolate out onto the cool surface to a thickness of just under 1/16 in. (2 mm) (1). When it just begins to crystallize (the texture is just right when your finger can indent the chocolate easily), place a finger firmly on a tip of the triangle and push the chocolate. It will ruffle naturally (2).
