This rich moist cake is made by cooking whole clementine oranges in water then puréeing with naturally sweet parsnips and baking with ground almonds instead of flour, for a tangy almost marmalade-like flavour.

Ingredients

  • 150 g/5 oz/2 clementine oranges, washed

Method

  1. Add the clementine oranges to the base of a steamer, cover with water and bring to the boil. Set the steamer basket on top, add the parsnips, and cover and steam for 20 minutes until the parsnips are soft. Cook the clementines for another 10 minutes or so until they are also soft. Cool.
