Think of moist, dark gingerbread and you tend to think of masses of sugar, syrup and treacle. This healthier version cuts the sugar with naturally-sweet roasted sweet potato and adds malted barley instead of syrup. Just like the bonfire party favourite, parkin, this recipe adds cholesterol-lowering oatmeal in place of some of the flour.

  • 350 g/12 oz/2 small sweet potatoes, scrubbed

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Prick the sweet potatoes with a fork, put on to a baking sheet and bake for 40–45 minutes
