Leicestershire Market Day Savoury

This dish would be left cooking for hours, while the farmer’s wife went to market. It requires a minimum of two hours but its flavour is improved by longer cooking.


  • 6 pork chops
  • 2 pig’s kidneys
  • 2 lb (1 kg) potatoes
  • 1 lb (½ kg) onions
  • 1 lb (½ kg) tomatoes, blanched, peeled and quartered
  • 1 small apple
  • 1 teaspoon dried sage
  • 2 cups (4.5 dl) stock
  • Salt and pepper


Peel and slice the potatoes and onions. Skin, core and slice the kidneys. Put the chops in a casserole, then add a layer of potato slices and a layer of onion slices. Next, add the sliced kidneys followed by the tomatoes and then another layer of onion and potato. Sprinkle this layer with the peeled, chopped apple, the sage and salt and pepper. Pour in the stock.

Cover the casserole with a tight-fitting lid or with foil and put in a slow oven 300°F (160°C, Gas Mark 2) for 2 to 4 hours.
