Mothering Sunday Wafers

These were traditionally served with jelly or trifle for tea on Mothering Sunday in Hampshire.


  • ½ cup (60 g) flour
  • ¼ cup (60 g) sugar
  • 4 tablespoons double cream
  • 1 tablespoon orange-flower water


Beat all the ingredients together for 30 minutes. (This may be reduced to 5 minutes if an electric beater is used.) The long beating is important to the final result.

Grease 2 or 3 baking sheets well. Spread the mixture very thinly on the trays in rounds about 4 inches (10 cm) in diameter. Bake in a hot oven, 425°F (220°C, Gas Mark 7), for 10 minutes or until they are beginning to brown. While still hot, roll the wafers round the handle of a wooden spoon. As they cool, they will dry and become crisp. They can be served plain or filled with whipped cream immediately before serving.
