Instead of frying the cooked rice as for risotto al salto (), here it is baked as a bomba or timballo. What you want is a crispy golden exterior and melting cheese inside. The fillings may vary according to what you have on hand. Cheese is most often used, but little meatballs, or chopped meat or vegetables mixed with cheese, work well, too.
