Ingredients

Liquid

  • litres ( pt or 1⅜ U.S. gal) Game Bouillon

Nutritive Ingredients

  • kg (3 lb 6 oz) chopped lean game flesh, in keeping with the consommé being prepared
  • 2 kg ( lb) roast game carcasses

Flavouring Ingredients

  • 200 g (7 oz) leek, roughly chopped into small pieces
  • 100 g ( oz) mushrooms, or Mousserons or morels: dried for preference
  • 1 sprig of sage
  • a pinch of rosemary
  • 5–6 crushed juniper berries
  • a little milled pepper added to the game flesh

Clarifying agent

  • 3 egg whites

Method

Proceed as indicated for Ordinary Consommé.

Cook 55–60 minutes.
