2 litres ( pt or 9 U.S. cups) Chicken Consommé lightly thickened with tapioca. The garnish should consist of 4 tbs of early spring vegetables cut into various shapes and cooked in boiling salted water. This soup is similar to Consommé Printanier but with as varied a selection of vegetables as possible.
