Prepare 3 small pancakes without sugar and spread each with a thin layer of chicken and cream forcemeat. Place the pancakes on top of each other and sprinkle the top layer with very finely chopped truffle. Smooth the surface carefully with a palette knife so as to incorporate the truffle into the forcemeat, place in a moderate oven for sufficient time to cook the forcemeat then cut out with a 2 cm (⅘ in) plain round cutter and add to the Consommé.
