2 litres (3½ pt or 9 U.S. cups) Chicken Consommé lightly thickened with tapioca.
Chicken forcemeat with the addition of Crayfish Butter moulded to the shape of a thin sausage, poached, then cut into thin slices and trimmed; 1 tbs fine Julienne of very black truffle.
