2 litres (3½ pt or 9 U.S. cups) Chicken Consommé flavoured with pheasant.
2 tbs small Quenelles prepared from pheasant and cream forcemeat with chopped truffle; 1 tbs pearl barley; 2 tbs fine Julienne of white of celery.
