2 litres ( pt or 9 U.S. cups) Ordinary Consommé with 1 dl ( fl oz or ½ U.S. cup) infusion of tarragon added at the last moment.

Garnish

2 tbs small grooved Quenelles prepared from chicken forcemeat containing chopped chervil and tarragon; 1 tbs small green peas; 1 tbs French beans cut in diamonds; 1 tbs asparagus tips.
