2 litres (3½ pt or 9 U.S. cups) Chicken Consommé clarified with the addition of 6 tbs tomato purée previously dried in the oven.
2 tbs diced white of chicken; 4 tbs very red tomato flesh cut in dice and poached in White Bouillon.
