2 litres ( pt or 9 U.S. cups) Chicken Consommé.


Arrange thin slices of French bread in layers in soup tureens, alternating with a mixture of grated Gruyère and Parmesan; cover with the boiling Consommé. Serve 1 poached egg per person separately.
