2 litres ( pt or 9 U.S. cups) Ordinary Consommé.


Wash 90 g (3 oz) pearl barley in lukewarm water, blanch, drain well, cover with White Bouillon, add a small piece of celery and simmer gently until cooked; time approximately 2½ hours. To serve: Drain the pearl barley well and add to the Consommé.
