2 tbs each of carrot and turnip cut into small batons 2½ cm (1 in) long by 3 mm (⅛ in) in diameter, using a column cutter and cooked in a little White Bouillon; 2 tbs very small green peas; 2 tbs diamonds of French beans; small rounds of sorrel and lettuce cooked at the last minute; Pluches of chervil.
