2 litres (3½ pt or 9 U.S. cups) Chicken Consommé flavoured and coloured with beetroot and the addition of 2 dl (7 fl oz or ⅞ U.S. cup) beer reduced by half.
4 tbs finely sliced, braised celery. Serve separately 40 Diablotins using paprika instead of Cayenne pepper.
