2 litres ( pt or 9 U.S. cups) Chicken Consommé.


Cheese Quenelles prepared as follows and served separately. Place 125 g ( oz) cream cheese in a basin and mix well with a wooden spatula; add a pinch of salt, 125 g ( oz) melted butter, 2 egg yolks, 125 g ( oz) flour and 2 tbs double cream; mix well together then fold in 2 stiffly beaten egg whites. Mould into Quenelles using dessert spoons, poach, drain and arrange them neatly in a deep dish. Sprinkle with grated Parmesan and melted butter and gratinate in a hot oven in time for serving with the Consommé.
