Prepare a Soupe à la Bonne Femme reducing the proportion of vegetables by 100 g ( oz) and using White Bouillon. Fifteen minutes before service add 60 g (2 oz) vermicelli; when the soup is ready add a Chiffonade of 50 g (2 oz) lettuce leaves, sorrel, spinach and, when available a few leaves of purslane. Add a few Pluches of chervil just before serving.
