Method

Place 250 g (9 oz) of well drained, pressed curd cheese and 250 g (9 oz) soft butter into a basin and mix together until very smooth. Add 1 egg and a little salt and pepper and mix together.

Divide into 60–70 g (2–2Β½ oz) pieces, wrap each in a very small thin pancake made without sugar and shape them oblong in the same way as Cromesquis. When required for service, dip in very light frying batter, deep fry in hot fat, drain and arrange on a serviette.
