Cooked the peas as for Petits Pois à la Française or Petits Pois au Beurre adding some blanched and tied whole lettuce to cook in with the peas.

When cooked, trim the lettuce and cut them into two or four pieces; place the peas in a deep dish and arrange the lettuce on top in a circle or a cross.
