4561 Rabottes de Pommes, or Douillons Normande

Prepare the apples as for baking then enclose each in a square piece of good Short Paste. Place a fancy round of the same paste on top, brush with eggwash and score with the point of a small knife.

Bake in a hot oven for 15 minutes.
