The kolache, a small hybrid of a tart and a filled pastry, is a standard on the dessert tables at Central European weddings. This treat, a variation of the Cloverleaf Dinner Roll dough, was a favorite during my childhood and formative years, but seems not to be so well known outside the South and Midwest. Whenever we would drive to Dallas to visit my grandparents, we always stopped at the Little Czech Bakery in West Texas, where they are famous for their kolaches.
