In early fall, Chinese people celebrate the gathering of the harvest during the Autumn Moon Festival. Families come together and eat round-shaped foods, like moon cakes, to symbolize familial harmony and unity. This Harvest Delight vegetable dish is something my mother would serve as part of our Autumn Moon Festival banquet. This is a simple, pure and clean dish that honors the vegetables with its beautiful plating. Because it’s so easy and healthy, I now make it year-round.
