This is an easy, flexible desert that you can also make with dried fairy clubs (Clavariadelphus truncatus). I sometimes add more sugar if the candy caps aren’t as sweet as I’d like, so before reducing the sauce, give it a taste and adjust the sweetness. Remember, the sugar will become more concentrated as the sauce reduces.

Ingredients

  • 2 slightly underripe Bosc pears
  • 1 cup apple cider
  • cup swe

Method

Peel and halve the pears. Core the pears (see note). Place the pears in a low pot with a fitted cover.

Combine the cider, wine, and sugar in a small pot and heat over medium heat until the sugar dissolves.

Add the sugar water to the pears, then add the thyme, cinnamon, and candy caps. Cover and poach over medium heat for 10 minutes, u
