I have loved experimenting with ideas for this lassi. For over a decade, I taught an honors course on tea at the University of Massachusetts Amherst, where I explored the world of tea with my students. The idea for making a mushroom lassi was inspired by that class and our mushroom teas. I decided to make a strong brew of chaga and reishi, sweetened and spiced, and frozen in convenient ice cubes for easy lassi making. The lassi stiffens up as it rests or cools, so add a few plain ice cubes
