When I was a child, I dumped vinegar over spinach and ate entire jars of pickles. I still prefer sour tastes over sweet, and I often mix a shrub with sparkling water to sip before dinner or guzzle in the garden on a hot summer day. Shrub is generally known as a sweet-and-sour syrup made from vinegar, sugar, and fruit (or, in this case, mushrooms!), served mixed with sparkling water and sometimes alcohol. The vinegar in a shrub will mellow with age, so patience is always a virtue. Feel free
