Add ¼ tsp. salt to 3 egg whites. Beat at high speed until frothy. Stir ¼ c. fruit jam until smooth; then add gradually, beating at high speed until stiff glossy peaks are formed. Add a few drops of food color for a delicate color. Spread meringue over lukewarm filling. Bake in slow oven (300°F.) 20 minutes, or until lightly browned.
