I made this sauerkraut for my sister’s wedding. They had a buffet-style dinner and wanted to serve locally produced food. It was a late August celebration, and white cabbage is growing everywhere in Sweden at this time so it was an obvious choice of vegetable to ferment, together with freshly picked carrots, red bell pepper and the fresh herbs all flourishing in my mother’s garden. I prefer to have the dill stalks in fairly big pieces as it looks nicer. Dill crowns might be tricky to find i
