I love fermented fennel. It is best to use fennel when it is fresh and in season. The mooli or daikon radish is high in prebiotics which makes this especially good for your digestive health. The recipe is not particularly spicy so if you want a more intense heat, add some more chilli. You can also experiment with different herbs or spices if you wish. This kraut is great with any dish as a digestive aid. Add it to salads and also in cooking for additional flavour.
