This paste is rarely exactly the same each time. The result varies with the chillies I use, and sometimes I add in more fresh vegetables, and less paprika powder. This is the beauty of fermenting; it is an art and actually difficult to make precisely the same ferment time after time.

The quantities in this recipe make enough paste for 1 batch of kimchi. You could use less if you wish, though I often double up to make larger batches as you see in the photographs – I usually do this w
