Kimchi is lovely with any dish. Awesome with meat or veggie burgers and hot dogs, it works amazingly well with pulled pork dishes or similar vegan alternatives, and is great in a stir-fry and with noodles. Sometimes kimchi can get a little mushy. If that happens I use it in cooking, adding it to soups and stews where it gives a wonderful umami flavour.
