Traditional kimchi is not vegetarian, or vegan. It contains fish sauce, and dried fish or shrimps. These ingredients are themselves salted, so added to the salt in the brine or ferment itself, Korean kimchi is often extremely salty. This is not good for bowel health and on top of that too much salt kills off even the good bacteria. So, I am careful with traditional kimchi recipes and reduce the salt as much as possible.
