Berries do not contain much sugar, so it is hard to create a good berry ferment without adding something sugary for the bacteria to feed on. You can add any carbohydrate-rich sweetener of your choice to make a jam. Sugar, maple syrup, raw agave syrup, coconut sugar or date paste are all good sweeteners to use. Honey might work but would not be my first choice as it is anti-bacterial.
