This fermented drink is made from the soak water of sprouted wheat berries and other grains. There are two stages: you need to sprout the grains and then you need to ferment them in water. It is a brilliant digestive tonic, and is a lovely drink to have especially after a second fermentation but it is also great to use as a starter in other fermented drinks and foods. You can use any kind of grain to do this drink or a mixture of them – I have made successful rejuvelac from wheat, spelt, kamut, rye and quinoa.
