There are two more nuts that I use to make nut cheeses with. You can get a much harder consistency of cheese with these, if that is what you are after, as you can press the nut paste when it is ready to get more water out. Pressing works better with almonds and macadamia nuts than cashews, though those will work if you take it slowly.
