The classic pork blood stew Dinuguan is often served with tender little steamed rice cakes called puto, a perfect match of earthy and sweet. It’s a staple of merienda, our ritual of mid-morning and mid-afternoon snacks. Here the iron-rich flavors of dinuguan are infused directly into rice, balanced by some of the warming and faintly sweet spices—cinnamon, cloves—found in black pudding, which I used to buy at chip shops i
