  • 6 x 400 g (13 oz) live lobsters

Method

Place all the ingredients for the herb butter in a food processor or blender and process until smooth. Spoon the butter into a piping bag with a 1 cm (⅓ in.) diameter nozzle.

Use a kitchen steel or a similar instrument to knock a 1 cm (⅓ in.) diameter hole in the top of the lobsters’ heads, thus killing them. Pipe the butter into the hole in each lobster’s head. You will notice the tail
