In this dish of Japanese origin, turnips marinated in the smooth tartness of lemon and in sweet vinegar are both refreshingly crisp and full of flavour.
The sweet vinegar can be quickly prepared by mixing together half a cup (125 mL/4 fl oz) of rice vinegar with half a tablespoon of honey or white granulated sugar. Rice vinegar can be found in Asian foodstores and some supermarkets.
