In this dish of Japanese origin, turnips marinated in the smooth tartness of lemon and in sweet vinegar are both refreshingly crisp and full of flavour.

Ingredients

  • 10 small (or 5 large) turnips, greens trimmed, peeled
  • 1 teaspoon salt

Method

The sweet vinegar can be quickly prepared by mixing together half a cup (125 mL/4 fl oz) of rice vinegar with half a tablespoon of honey or white granulated sugar. Rice vinegar can be found in Asian foodstores and some supermarkets.

Halve or quarter then thinly slice the large turnips (small ones need only be sliced). Sprinkle with salt then toss until the turnip is fully coated. Let st
