It is easy to make fresh curd using junket tablets. Goat milk makes a perfectly acceptable fresh cheese. The milk is pasteurised, but not otherwise interfered with. Cleanliness is very important in cheesemaking. Use a product that sterilises baby bottles to sterilise any utensils used during the cheesemaking.
