  • cup (90 mL/3 fl oz) virgin olive oil

Method

Heat the olive oil in a heavy frying pan or skillet over a high heat until smoking. Add the meat, onion and carrot and brown (approximately 7 minutes). Add the garlic, tomato paste (purée), thyme and bay leaf and stir until the paste begins to caramelise (about 3-4 minutes). Deglaze with the wine. Reduce the heat and simmer for 10 minutes.
