We use a tremendous amount of fresh citrus in our recipes, and we regard its importance as nearly equal to salt. For the citrus that have been used only for their zest, we always make sure to juice in routine batches to avoid waste. We incorporate the juice into various sweets and other recipes throughout the year, but during the peak of summer, our favorite use is to turn it into big batches of herby lemonade for our team to enjoy.
