Rarely has a butter come around that I have not loved, and the same goes for a radish! Put the two together and you have a simple snack for a picnic or a dish elegant enough to sit next to caviar. It truly is a classic combination that stands the test of time. I love making this dish in late spring, when the radishes are petite, sweet, and contain just a dash of heat, or in the fall once the weather cools down and their sugar content increases to bring out juicy, almost fruity flavors.
