Although this famous ice-cold Spanish soup has countless variations, it should always be a piquant and refreshing contrast to the dog days of summer. The base of the soup, which traditionally includes fresh tomatoes, olive oil, and garlic, can be altered by incorporating everything from chiles and cucumbers to onions and herbs. I find that adding a bit of stone fruit, such as cherries, to the base imparts a beautiful depth of flavor and a subtle sweetness that help to distinguish the soup f
