Is there ever a present moment in farming? In August our greenhouse is seeded full of winter produce, much of which won’t be ready to harvest until late November and some, like leeks, won’t come out until May! Though slow growing, the kale and mustard greens we plant are much more tender than those we grow outside in the warmer months. Their sugars creep out due to the cold, humid environment, and their leaves stay soft, free of scalding sun rays.
