Chicories and lettuces belong to the same botanical family, but chicories tend to be heartier and have a more assertive flavor. Their bitter notes are perfectly complemented by richer, fattier dressings and salty, sweet bits. For this salad, we love to use tender heads of Belgian endive for their sturdy texture and delicate flavor, though a mixture of chicories, such as radicchio (Treviso or Chioggia) and frisée, would also be suitable.
