Any vegetable is bound to be great coated with Parmesan cheese and brown butter. Here, in true Fredo style, juicy asparagus stalks are prepared as shown to us by our Uncle Fredo, a dish passed down to him by his mom. Simply said, it’s fabulous!

Ingredients

  • 2 bunches asparagus, trimmed of woody ends
  • Wedge of Parmesan cheese (3–4 oz)
  • 8–10

Method

Blanch the asparagus stalks as directed until they are tender but still have crunch, then shock in the ice bath until cool. Drain well.
