Known in French cuisine as pommes de terre fondantes, these potato nuggets are one of the most impressive classic French potato recipes—and one of the easiest. They can be prepared with little effort on a random Wednesday night for serving with roasted chicken or on New Year’s Eve for proudly displaying around a standing rib roast.
Butter alone will always do more than just fine for this preparation, but if you want to kick it up a notch, use rendered animal fat for the searing and
