Just because I can make pie dough doesn’t mean I like to or even want to. That’s why I always have a pack or two of puff pastry dough in my freezer for those occasions when I need to pull off a dessert reminiscent of pie. I find tarte Tatin to be much tastier and, honestly, more impressive than humble pie. It is juicy, tangy, rich, and simpler to make than any pie I’ve come across. Using very tart apples, or even a mix of apples and pears, helps to combat the sweetness of the caramel
